Its stone and schist walls enclose a contemporary design environment overlooking the Dourdou river. The hotel is led by Chefs Émilie and Thomas, who have transformed this property into a temple of gastronomy and a "home away from home" welcoming experience. Please note: due to its historic architecture, the property is not wheelchair accessible.

The 9 rooms are havens of peace featuring balconies or terraces that deliver the soothing sound of the river. Culinary excellence is embodied by the E&T Restaurant (1 Michelin Star), where Émilie and Thomas create an instinctive four-handed cuisine, purposefully devoid of fixed signature dishes to constantly surprise guests. Alternatively, the Bistrot Le Héron offers simpler, heartfelt seasonal cuisine, to be enjoyed on the riverbank terrace.

Located just outside Conques, one of the most beautiful villages in France, the mill is surrounded by a natural landscape perfect for hiking, cycling, or canoeing along the Dourdou river.
