Ronda is a daytime city — the Puente Nuevo over the gorge, the Plaza de Toros, the lanes of La Ciudad — but the best part of the day comes in the evening, outside town. This proposal combines a stay at Hotel La Fuente de la Higuera, a restored olive mill surrounded by olive groves a few minutes from the centre, with dinner served on the terrace among orange and lemon trees, magnolia and jasmine. The three-course menu changes daily and is prepared by chefs trained in Michelin-starred kitchens, using vegetables, citrus and olive oil from the estate; the hotel sends it by email or WhatsApp and choices must be confirmed by 4 pm. The evening of the dinner is agreed directly with the hotel after confirmation.

Hotel La Fuente de la Higuera occupies a centuries-old olive mill restored by its owners, in open countryside a few kilometres from Ronda. Olive groves all around, a garden of cypresses, walnut trees and palms, and a pool looking out over the hills of the Serranía. Rooms and suites are all different, with handcrafted furniture and original artworks; several have a private terrace or patio. The restaurant works with produce from the estate's kitchen garden and orchard. In winter the sitting room with its fireplace, in summer the terraces and the poolside.
